  • 260 g of self raising flour
  • 2 teaspoons of cornflour
  • 1 1/2 teaspoons of bicarbonate soda
  • 1 tsp of salt
  • 160 g of brown soft sugar
  • 50 g of granulated sugar
  • 160 g of unsalted butter slightly softened
  • 2 medium eggs
  • 1 teaspoon of vanilla extract
  • 170 g of milk chocolate chips or a mix or any variety


  • Preheat your oven to 170 C
  • Prepare by lining a flat tray with baking paper
  • Cream together the butter and both sugars until they appear pale and fluffy, gently add in the eggs one by one followed by vanilla extract.
  • Beat then scrape down sides and beat again (low to medium speed) if it’s splits while beating don’t panic once you add the flour it will come back
  • Fold in the flour, cornflour, bicarbonate soda and salt - turning and folding. Add in most of the chocolate chips (save a few for top of cookies). At this stage it should be like a dough like the picture above
  • Wrap the dough in baking paper and put it in the fridge for 20 mins
  • Shape the dough into a little bigger than golf ball sized balls
  • Place on prepared tray evenly spaced apart from each other. Flatten them ever so slightly and press a few remaining chips onto the top of each one.
  • Bake for 12-15 mins depending on how soft you like your cookies
  • Leave to cool on wire rack or enjoy while still warm
